Heart-Healthy Spicy Roasted Almonds

Who knew that one of the best ways to beat both stress and hunger involves eating almonds? Almonds are a good source of magnesium, B vitamins and zincwhich are important for balancing mood and decreasing stress and anxiety! A serving of almonds contains heart-healthy fats and protein too; so they’re a perfect snack during a busy workday or on the go. This recipe involves toasting the almonds at a low temperature in order to preserve the healthy fats, yet still gives the almonds a delicious roasted flavor.

Prep time: 5 minutes
Total time: 20 minutes

Yield: 2 cups

2 cups whole almonds
1 tablespoon coconut oil
½ teaspoon ground chipotle chili powder
½ teaspoon smoked paprika
¼ teaspoon ground cumin
½ teaspoon sea salt

Preheat oven to 170 degrees F.

In a small bowl, toss almonds with coconut oil, chili powder, paprika, cumin and salt.
Lay flat on a sheet pan and bake for 15–20 minutes, turning at least once, until nuts are toasted. Enjoy warm.

Once cool, store in an airtight container and enjoy within seven days.
