Paleo Almond Bread

This is an easy, all-purpose grain-free bread—great for snacking, sandwiches and toast. Think of this bread as a solid foundation for baking exploration, and feel free to play around with additions like nuts, seeds, dried berries, or even chocolate chips. While ingredients like xanthan gum and guar gum are often found in gluten-free baked goods, this clean recipe skips those additions in favor of leavening from baking soda and eggs.

Cook time: 30 minutes

Yield: One loaf

1½ cups almond flour
¾ cup tapioca flour
¼ cup flax seeds or shredded coconut
½ teaspoon salt
½ teaspoon baking soda
4 eggs
1 teaspoon honey
1 teaspoon cider vinegar


  1. Heat your oven to 350 degrees F. Grease a loaf pan with coconut oil or butter. Mix all ingredients together (by hand, with the paddle of a stand mixer, or using the dough hook in your food processor) until evenly blended. Pour into prepared loaf pan and place in oven for 30 minutes.
  2. Remove from the oven and allow to cool before removing from the loaf pan. You may need to run a knife around the edge to get it to release, but a gentle tap on an inverted pan is usually enough to release this almond bread loaf.
