Raw Snack-Worthy Goji Berry Energy Bites

These bites are a great source of natural energy for summer hikes and adventures! They contain maca powder, from the maca root, which supports the body’s endocrine system and helps fight fatigue. They also contain walnuts and flaxseeds for a healthy dose of plant-based proteins and omega-3 fatty acids.

Makes 8 bites or 4 bars

1 cup walnuts
½ cup goji berries
1½ cup pitted dates
1 tablespoon ground flaxseed meal
1 teaspoon maca powder
Pinch cinnamon
Pinch nutmeg


Add walnuts and goji berries to a food processor and pulse until finely minced. Add the dates, flaxseed meal, maca powder, cinnamon, and nutmeg and pulse until the mixture is well incorporated.

Press the mixture into a pan and cut into 4 bars or 8 squares.

Store in an airtight container in the refrigerator for up to one week.
